Installation varies between each one.

[ Serverside ]
DS-Online v1.32
DS-Online is a very common serverside mod that has ran on many servers for years, created by DeathSpike. Offering many features like admin system, free emotes, fixed bugs, clientside, etc. this mod has been one of the top ever since its release.
DCMOD v1.2
The #1 pick for force fighters, as it offers private force fight duels while there are mods out there that do not really carry this capability (yet) by Janos Oudrin. It still includes an admin system and emotes, and even chat teleports (typing "!pad" can bring you to the pad of the Bespin Streets). The only downside is a complex way of handling commands, as it is the only mod that uses /dchelp rather than just /help or /amhelp.
ClanMod v2.05
A little similar to DS-Online minus the clientside, ClanMod by RoboCop offers an admin system, emotes, and a familiar look to a Jedi Academy serverside mod, with custom messages for all commands.
Vulcanus Admin Mod v2.2
Meet the origin of the admin mod in JK2. The first serverside mod to be publically released by MarS with an admin system and emotes. This mod here has changed JK2MP's community to where it is today.
Jedi Academy Mod v1.6
Jedi Academy Mod was probably the most popular serverside mod running before DS-Online came out. Its features are very similar to DS-Online and Vulcanus Admin Mod combined, including a cvar which can control kick damage.
CJK-Mod
This mod by tr1x specializes in Instagib, a gametype which uses the disruptor rifle and specializes as a one shot kill. This gametype was very popular whether as CTF or even as FFA.
[ CLIENTSIDE ]
Clan Apathy's Bespin Clientside
I was reluctant whether or not I should put this in the Serverside or Clientside section, since it requires having it running on the Serverside in order for it to work, while on the other hand, it requires people to download it in order to see the content. Anyway, this clientside by JaggedCougar is without a doubt one of the best I have ever seen in a Bespin Clientside. It does not change anything about the map itself. Instead of adds external places to go into, such as a fun slide, a remake of Kakariko Village from The Legend of Zelda: Ocarina Of Time, a duel arena designed to give the best FPS possible, a fun pool, a bar, and Acrobat's A-Mountain, which is a strategic "mountain" to climb to the top which can be very challenging to new players, requiring knowledge on different types of strafe jumping. If you have not seen this yet, it's definitely recommended.
Dark Forces II Sounds for Jedi Outcast
This is a sound overhaul which replaces many sounds with the sounds from Dark Forces II, made by yours truly.
The sound replacements include button navigation, jump / land, saber swinging, chat sound, Dark Forces II Kyle Katarn, and a selection of character sounds, such as most male / female characters, stormtrooper, etc. If you're a fan of Dark Forces II, this is definitely one you should check out.

Nexuiz Sounds for Jedi OUtcast
If you don't know Nexuiz, it's basically a modification of Quake 3. This mod, (also by yours truly), replaces the sounds of the announcer in the game (Mon Mothma) for the announcer of Quake 3. These sounds are "Begin!", "The red/blue team has stolen the flag", "The teams are tied for the lead", "The red/blue team has scored", and "The force is/is not with you". If you grow tired of Mon Mothma's voice, you may like this mod.
